What I Didn’t Count On… + What You Can Count On

Firstly, thank you so much for your feedback in the poll! I’m taking it to heart.  Also, the random winner is Karen! Karen, I’ll be emailing you. : )

A few things have happened recently to make this amongst the busiest two weeks of my life. Truly. But today was definitely a Manic Monday all on its own. Just…because. See below…and feel free to laugh through your sympathy.

Things I Didn’t Expect This Week (p.s. “this week” is only one day long thus far, as I write this…)
- falling down a flight of concrete stairs. fail.
- staying up until 1:30am on a weeknight writing a long post, only to realize I cannot find the paper on which my new [and totally awesome] recipe is written anywhere. and thus the essential component of the post is missing. fail.
- finding a magical hidden floor on campus — complete with balcony and silence for studying. win.
- getting a lot of nice emails, comments, and feedback from you, lovely readers. win win win.
- icing and elevating. all night long. fail.
- laughing at myself when I could have easily cried. win.
- accidentally flashing some people due to a wardrobe malfunction. fail. (for me at least… [JOKE.])
- hardly cooking at all because a delicious, seasonal, fresh-from-our-garden meal was ready at all times, thanks to the BFF Manfriend. win.
- trying nutritional yeast and getting really, really excited about the possibilities. win.
- being really sleep-deprived, really behind on blog stuff, and really swollen in the foot-and-ankle department. fail.
- someone nonchalantly presenting a special plate of ripe mango with a message for me as I studied and stressed at my desk…

WIN.

I needed that, Hubs. Thank you. <3

Things You Can Expect Within This Week:
- me to not suck at blogging by this weekend, but probably sooner.
- at least one new recipe post — hopefully with the aforementioned “lost” treasure… (Note to Self: do not write recipes on sticky notes anymore, regardless of how “securely” they are stored. Kthanks. — Yourself.) But a new recipe even if I don’t find it.
- a glimpse into what I pack for meals now that class is in session. (I was surprised this got some votes in the poll, but hey, I’ll give it a try!)

I so, so appreciate your feedback in the poll, the comments, and your emails. Seriously — thank you. I’m glad to have a better sense of why you visit this site, and what I can do to best serve my purpose. You da best.

    I voted for new recipes but I’m very interested in possible new lunch ideas. As someone who packs everyday to save my money and my waistline, I’m always interested in ideas to use.

    GEEZE, girl. Long week so far, but it can only go up from there, right? ;)

    This week I can count on a ridiculous to-do list, and the excitement of what happens when every thing is checked off of it!

      Right! Oh my gosh, I cannot believe how soon you are leaving…eeek!!! (P.S. I’m starting to wonder if the FedEx man just really loves Muir Glen and is stealing all my packages…. Who can blame him, though? ;) )

    Holy Monday! I’m glad today is a new day! :) I would love to see a glimpse of what you pack for lunch! That mango is possibly the cutest thing I have seen today!

    This week, I have been surprised by some very kind comments from a professor who I thought hated me last semester!

      So true! I’ll be posting maybe a meal a week and we’ll see if people like it or not :) I am so glad you got encouragement from your prof — I know what just a few kind words can do (especially when you think that person hates you, haha)! Have a great long weekend! <3

    If you are in pain and having foot discomfort take a break and just blog and not cook. You need to heal sounds like it’s pretty bad. Hope you had it checked out.

    I’m not sure my husband could even figure out how to cut a mango up, let alone carve a little heart out. What a cute gesture :)

    When you have time, I would love to hear more about the nutritional yeast. I jar of it caught my eye at the store this week, and I wondered about it. Why is it good for you? Is it especially good for particular reasons? What does it taste like?

      Hi Cindy! I’ll plan to do a post on Nutritional Yeast (aka Nooch) for a better explanation. :) In short, it’s full of vegan protein, and it’s high in vitamins, especially B vitamins, which sometimes can be tricky for vegetarians especially to get. It tastes kinda cheesy, and smells a little fishy (literally) — but it makes an excellent cheese sauce when mixed with things like non-dairy milk, or it can be sprinkled like parmesan, or it can be added to popcorn. Lots of possibilities for sneaking extra nutrition in! :)

    Yowch, I hope you’re okay!! Falling is no good – funny, but no good.

    I’ve been surprised at how crazy things have been around here since Irene came along. There are still parts of town without power and flooding and craziness. So I’m hoping the end of the week gets back to normal! We were pretty lucky and didn’t loose power or have any issues. Mother Nature is a beast.

      I have been kind of stalking your twitter and such to make sure things were generally kosher. Phew. Glad you are safe, but I’m sure there is a lot of hassle still involved (power outage, flooding, etc.)! Mother Nature might be the only thing that can beat Chuck Norris. You know it’s true.

    nutritional yeast is the best!

    and we are so bad a writing down recipes, Lori is the sticky note queen, haha We recently got a notebook to write recipes in, but for some reason still cannot keep that in safe place

      So after I wrote that I realized I’d had it before, but it was in a series of failed recipes I attempted…lol. I am addicted now! I know, I am terrible at keeping track of my recipes. Oye. Hope you girls have a great weekend!
