Put The Lime In The Coconut: Vegan Lime Coconut Milk Ice Cream

I went there.
I so went there.
We are all probably wanting relief right now, yes? Dog days indeed. Truth be told, if I would have had tequila on hand, I probably would have thrown it in there too. Margarita ice cream? Shoot. It’s 100 flippin’ degrees out — don’t mind if I do!
Remember how I said in my last post that I worked in a local ice cream shop in high school? Yeahhh… about that. Lime ice cream (not with bright green, fake lime flavoring — real lime zest and juice) was how I gained a few extra pounds that summer… But seriously, can you blame me?! This version is a healthy, vegan take on that indulgence. It’s just three simple, delicious, whole-food ingredients. What else could possibly be more refreshing than cold, creamy, lime on these last sweltering days of summer when you feel like you’ve been trapped in the armpit of Hades? It has just enough tart and zing to perk your tastebuds and your mood. (That was way cheesier than I meant it to be. Forgive me.)
Plus, once you share the three magical ingredients, it will make everyone around you start singing and dancing to this song in the kitchen (at least…if you’re a member of my family, apparently):
It’s okay if you drop your spoon (perhaps in a garden as you take photos…ahem), or are simply in a hurry — just get that ice cream in your mouth, friend.
You know you want to go there too. So do it. Go there. And don’t look back.
Ingredients:
2 cans coconut milk
1/2 C agave or honey
2 fresh limes
Recipe:
1) Zest limes.
2) Mix coconut milk, sweetener, zest, and juice of both limes in a large bowl. Taste, and adjust sweetness if desired.
3) Process according to instructions included with ice cream maker.
Um… Do you see those flecks of green? That is deliciousness, otherwise known as lime zest. If you can eat graham crackers (or know how to make a GF version), this would be an a-m-a-z-i-n-g Key Lime pie substitute. I’m drooling on my keyboard so… This just got awkward.

I will have to start storing kitchen gadgets in my oven if I buy another one, but this recipe almosts forces me to buy an ice cream maker!
Can you really add booze to the recipe and have it come out in a good consistency? If so, you can find me at bed bath and beyond on my lunch hour!
Haha! Or, you can just be like me and mooch off of other peoples’ ice cream makers — no storing necessary! I don’t know for sure about the booze question, but I think it would be fine. Can I join you for the BBB Happy Hour… I mean, lunch hour?
Yum! I have seen GF graham crackers at the health food store but I have never looked at them. Not sure of what the ingredient profile looks like!
All the ones I have seen are disappointing

It’s a little cooler our East. But humid today. Going to use your marinade for veggie kabobs for supper and I have some asparagus. I have to check my Goodwill store but never saw a ice cream maker but we have Mennonites here and they would grab it if it was there.

ohhh myyy goshhh..this is my kind of ice cream!!!! I’m not too much into fruity ice creams, but I love limey stuff, and of course coconut. I’ll def. put an icecream maker in my registry when the time comes haha!

I’m just going to throw this out there: alcohol generally has a lower freeze point than your average ice cream ingredients (That is to say, water’s freeze point is 0C, and alcohol’s is -114C). …It may take some creativity to get booze ice cream to work. x)
Regardless, this recipe looks AMAZING. I’ll definitely be trying it in the near future. ^_^

Borrowed my neighbors ice cream maker right away. Super YUM! I added some fresh mint too. My kids and I have been singing the lime and coconut song already so this was perfect! I might have to try out dough balls tonight!Hmmm which ones do I try first???
Amy, this is awesome! I would recommend either the cinnamon (if you’re a cinn-raisin fan) or the chocolate chip ones. People love the double dark chocolate too, though, so I don’t think you can go wrong!
