Effortless Portobello Burgers

Ok, ok. You all guessed correctly — the teaser from yesterday was most definitely a portobello burger. Nicely done. If you are yet to taste the glories of this mushroom delight, brace yourself — your world is going to be rocked. The recipe I’ve provided below is just one very, very simple preparation method in a myriad of possibilities. I’ll be sure to keep you updated as I experiment with variations, but for now, I wanted to share the laughably easy and basic manner in which I typically (and lazily) cook our vegetarian patties.

Oh, and do know that many of you affirmed what I knew my recipe page was lacking, and I took every comment suggestion to heart (and…stomach)! Get excited for deliciousness. Destination: Summer BBQ Yum Town. It’s going to be hot. It’s going to be crazy. It’s going to be…food. (Sorry, was that anticlimactic?)

Ingredients:
2 portobello mushrooms
3 – 4 TB of balsamic vinegar
1-2 Tb extra virgin olive oil
minced garlic, if desired

Recipe(ish):
1) Mix vinegar and oil together, adding garlic if desired. Set aside in a small dish that will hold the two ‘shrooms.
2) Remove stems from portobellos. If they are extra-thick, and you are concerned they won’t marinate correctly, just gently and shallowly cut and X on the cap.
3) Place mushrooms in the marinade dish and cover. Place back in the fridge (or not…). Flip after 30 minutes.
4) After the mushrooms have marinated for an hour, either broil them or bake at 425* until tender. They do fine on the grill (just have some foil underneath), or in the pan, too!

I know. It’s kind of ridiculous to even call that recipe-ish. Way too easy. This highly adaptable, of course; more oil if you like a richer taste, less balsamic for a more “pure” flavor (though do salt a little to make up for the loss of vinegar). These burgers are also quite low in calories, so be sure to bulk them up with avocado slices and serve them with hearty, protein-filled sides! Our favorite way to add some extra indulgence is to top them with sauteed, chopped onion that has been cooked with generous amounts of olive oil and salt. Oh yes we did.

    I’ve never made a mushroom burger but I’ve had them — they are so delicious. Good call on loading them up with sauteed onions.

      A restaurant here, Larkburger, has the best portobello burgers. They top them with a ton of sauteed onions (where we got the idea, I suppose). Drool. Can’t beat ‘em!

    As delicious as that sounds, I think it would be more of a topping on another veggie burger for me. I like bean-based veggie burgers to still make sure I get some decent protein. The photos are beautiful!

      A fair point. If it’s a big one it will fill me up, but otherwise I would need two, or a hefty side dish :) And yes, I think bean burgers win nutritionally, for sure!

    I love shroom burgers! And if you flip them upside down, they make the perfect cup to hold salsa, bbq sauce, diced veggies or, my fav, pineapple. Num!

    I have never had a mushroom burger – I always imagine them being really watery – like, a lot of ‘bite’ but then just water, so it kinda grosses me out! I like black bean burgers though :-D But any burger with sweetcorn in is straight down the drain. eerrrlack. I hate sweetcorn!

      If you’re worried about them being too watery, just lightly brush ‘em with olive oil, and salt + pepper ‘em before grilling. They should be perfect :) I hate sweetcorn too! Bleh. :P

    My husband and I were discussing work BBQs that we tend to have a of in the summer. In the past I would eat something beforehand and bring a dish that I ‘could’ eat, since I would not be partaking in the burgers, brats, potato salad etc. Last year, on of the hosts was nice enough to pick up a pack of veggie burgers for me. As much as I loved them for doing this – frozen veggie burgers just aren’t the greatest.

    So after that long novel, my point is…how easy would it be to bring a beautiful portobello with you to a BBQ and ask the host to grill it up for you! I am sure more than one person would be slightly jealous.

    I prepare my shrooms the exact same way when grilling them the toppings are what make the burger anyways!! I love dr pragers (sp?) veg burgers for premade ones but I usually just make my own its so much cheaper!

    YUM! I love portebellow mushrooms. My new fave premade burger are Sunshine burgers and I’m also a huge fan of black bean burgers. Now if only the rain would stop (here in NYC) :)

    Did you know that you could easily eat this raw!? After marination, just eat! The acid helps “cook” the mushroom. But I know that’s a little strange for some people, so cooking is great too. Your burger looks so fresh and delicious, just what summer should be!

    I love mushroom burgers! :) I haven’t experimented with many other homemade veggie burgers though! The only store bought veggie burger I have tried is Dr. Praeger’s and those are pretty good!

      I just tried sunshine (?) burgers today, but they weren’t very burger-y. Ha! :) I think I’ll stick to portobellos!

    I mix mushrooms with a little bit of steamed buckwheat. It doesn’t change taste too much, but adds a lot of nourishing -flourishing vitamins to it!
